Food + gear
All prepped items. Sauces and condiments. Serving utensils. Napkins/paper. Boxes/cups/lids. Ice/cooler if perishable.
Compliance
Food-safety cert copy. Public-liability cert. Trading permit for that site.
Pack-down
Bin bags. Cloth + spray. Water for hand-wash. Rubbish disposal plan.
