Queue speed: the most underrated lever for food truck revenue

Why serving speed caps your revenue more than menu price does at busy events, and practical ways to shorten the queue.

At a genuinely busy festival, the ceiling on your revenue usually isn't demand — it's how fast you can serve the queue in front of you before people give up and walk to a competitor. Queue speed is one of the highest-leverage things a mobile food operator can improve, and it's rarely treated as seriously as menu design.

Measure it before you fix it

Time your service from order to handover for your three most common orders during a genuinely busy period. Most operators are surprised by where the actual delay sits — often not cooking time, but payment, packaging or a single bottleneck station.

Reduce menu choice at the point of peak demand

A tight 'festival menu' of your four best sellers, rather than the full stall menu, speeds up decision-making at the till and simplifies your prep line simultaneously. Save the full menu for quieter weekday markets.

Separate ordering from payment from collection

A single-lane 'order, pay, wait, collect' flow caps throughput hard. Even a simple split — order and pay at one point, collect from a numbered pickup spot — lets multiple orders be in progress at once.

Pre-build what you can

Anything that can be prepped ahead and finished to order (par-cooked components, pre-portioned toppings, pre-made bases) shortens the visible wait without sacrificing quality, and reduces pressure on your slowest station.

Card-first, cash-optional

Tap-to-pay is typically faster than counting cash and change, especially for a queue of small transactions. If cash still makes up a meaningful share of sales, having exact-change floats ready speeds up that lane specifically.

Track the payoff, not just the feeling
