Temperature logging for mobile food: doing it properly without slowing service

A practical approach to temperature monitoring and logging for mobile food businesses that satisfies inspectors without adding friction.

Temperature logging is one of the most commonly cited gaps in food safety inspections of mobile vendors — not because operators don't check temperatures, but because they don't record it in a way that holds up as evidence.

Know what actually needs logging

Cold storage on arrival and periodically through the day, hot-holding temperatures for cooked food waiting to be served, and cooking temperatures for high-risk items (poultry, minced meat) are the core checks most food control plans require.

Frequency matters as much as accuracy

A single morning check doesn't demonstrate control across a full trading day. Most plans expect periodic checks — commonly every two to four hours — logged with a time, not just a temperature reading.

Paper logs get lost; digital logs get forgotten differently

A paper temperature sheet often survives one wet market day before becoming illegible. A digital log solves that but only if it's genuinely quick to fill in during service — anything that takes more than a few seconds per entry gets skipped when it's busy.

Corrective actions need recording too

If a temperature check fails — a fridge running warm, for example — noting what you did about it (moved stock, adjusted the unit, discarded affected product) is what actually satisfies an inspector, not just the failed reading on its own.

Train every staff member the same way

Inconsistent logging between staff members is a common inspection finding. A short, specific procedure — what to check, how often, where to log it — removes ambiguity about whose job it is on a given shift.

Keep logs attached to the event, not floating separately

Recording temperature checks against the specific event in CartFlow keeps a clean, dated record tied to exactly where and when trading happened, ready to show an inspector without hunting through a folder of loose sheets.
