Food truck insurance: what you actually need

Insurance is the boring backbone of every serious food truck. Here's what every mobile food business should have, and what most people underinsure.
Public liability
Covers you if a customer or third party is injured or their property damaged. Most markets and events require $2M minimum; $5M is common.
Vehicle
Comprehensive cover on the truck itself. Include all fitted-out gear — check the sum insured, not just the drive-away figure.
Product liability
Covers you if someone gets sick from something you sold. Often bundled with public liability.
Stock
Cover for spoilage if a fridge or freezer fails. Cheap, and worth it if you carry serious stock.
Business interruption
Pays out if you can't trade for a defined period after a covered event. Under-considered by most operators.
